Butternut Squash, Gruyere, and Sage Pizza

Yield:  2 medium pizzas

 

1 recipe, basic pizza dough
1 butternut squash peeled
Olive oil
Salt and pepper
2 cloves garlic, minced
½ cup mozzarella cheese, grated
¼ cup gruyere cheese, grated
20 sage leaves
½ lemon, optional

Slice off top and bottom of squash.  Cut in half and scoop out seeds.  Slice crosswise into ¼ inch slices.

Place on cookie sheet.  Brush with olive oil and season with salt and pepper. Roast in oven at 400 degrees for about 30-40 minutes or until lightly browned and tender to touch.

Roll out pizza dough.  Brush with olive oil and garlic. Sprinkle evenly with cheese. Arrange butternut squash slices over cheese.  Bake on pizza stone for about 10 minutes or until all of the cheese is melted.

While pizza is baking, fry the sage leaves.  Drain on paper towels.

When pizzas are done, top with fried sage and juice of lemon.  Cut into wedges and serve.
