Kids in the Kitchen - Recipes:
Health Muffins
This batter makes a lot! The batter lasts for 6 weeks in the refrigerator.
4 eggs
1 Qt. Buttermilk
5 t Baking Soda
2 C Sugar
5 C Flour (can use whole wheat)
1 C Canola oil
1 12 oz. box
¼ c Flax Meal Seed
¼ C Wheat Germ
1 C Oatmeal
¼ C Oat Bran
1 can Crushed Pineapple - optional
Blueberries - optional
Bananas, diced - optional
Combine all ingredients in large bowl and allow to “rest” for at least 24 hours. Bake in 400 degree oven for 15 minutes in regular muffin pan, or 8 minutes in a mini muffin pan.
Tortilla Roll-Ups
Makes 10 full size wraps or 60 small spirals
1 package tortillas
8 oz. cream cheese
1 C shredded cheese
Spinach
Shredded carrots
Ham
Turkey
Spread 1-2 T cream cheese over surface of tortilla. Top with remaining ingredients and roll. Serve whole or slice into spirals and toothpick individual spirals. Serve with dipping sauce.
Dipping Sauce
1 C Salsa
1 C Mayonnaise
Combine and chill.
